The Creamery

Last week I had the pleasure of meeting the creative minds, Kate and Marianne, behind the delicious ice cream at The Creamery; needless to say I was truly inspired! Oh and I got to taste more of their decadent ice cream! Yum! The Creamery ice cream is an artisanal product in the truest sense of the word, from the care and attention to detail in the sourcing of ingredients, to the creative flare that is at the heart of developing different flavours.

The owner Kate Schrire is a slow food advocate. She received a diploma from the SA Chef Academy and went on to head up operations at the Sustainability Institute in Stellenbosh. Here began Kate’s dream to create a product that was both hand-crafted and sustainable. The Creamery was officially founded in November 2011.

To maintain sustainability they try to source the majority of their ingredients from local farmers and suppliers who are passionate about both sustainability and biodiversity. This often means using only products that are in season.

As I mentioned to Kate and Marianne (“the creative team”) while doing my tasting, their ice cream is more than “just ice cream” – it is more of a stand-alone desert, with original flavours like lemon curd swirl, chocolate orange curd swirl and roasted pear and cardamom. Of the flavours that I tasted, my two favourites would have to be the lemon ice cream and the coffee. They also scoop the usual crowd favourites like chocolate and vanilla, but I think you need to step out there and be a bit more adventurous when eating The Creamery ice creams and try something new!

The team at The Creamery are constantly evolving their flavours and spend a lot of time developing new products. As part of their ongoing development process, they are creating their own version of an ice cream sundae, which promises to provide us with yet another dreamy ice cream experience. The sundae will consist of their amazing ice cream (of course!), a sauce (preferably warm), and a textural component, like a cookie or brownie, nut, fruit or candy (all made by them). Haagen-Dazs Ice Cream

One of the perks of what I do is being given samples to review. This week my review comes in the form of Haagen- Dazs Ice Cream Yum! Poor me I hear you saying! So I decided to pick their Cookies & Cream and Dulce de Leche, for my tasting – naturally I had the help of my tasting panel!

I personally preferred the Dulce de Leche, which was rich and creamy with ripples of delicious toffee caramel, although quite rich it keeps you coming back for more! The general consensus was that it was utterly delicious!

 

The Cookies and Cream is reminiscent of cookies dunked in milk, taking you back to your childhood. My girls loved this as well, what’s not to love – Chunks of delicious chocolate cookies are folded through creamy vanilla ice cream leaving you in ice cream heaven!

Creme Brulee Recipe

Crème Brulee is a family favourite as far as desert goes when eating out, but has always been a nemesis as far as making them at home. But I never let a challenge get the better of me, so after much research I decided to give them another try. Last week, with the help of my Commis Chef’s, we made them for a dinner party I was hosting. This is what you will need for my crème brulee recipe:

Ingredients:

  • 8 Egg yolks
  • 3/4 Cup castor sugar
  • Soft brown sugar {for topping}
  • 2 Cartons double thick cream
  • 1 Carton whipping cream
  • 1 Vanilla pod

Preheat your oven to 150°c {300°F}. Separate your egg yolks and set to one side. Place all the cream into a sauce pan ready to heat. With a sharp knife slice down the centre of the vanilla pod, then scrape down the length of the pod to remove the seeds. Add the vanilla seed to your cream and place over a low heat until it is lightly simmering; do not allow your cream to boil.

While you are heating your cream and vanilla, whisk together your egg yolks and sugar until light and creamy. Pour your heated cream and vanilla into a heat-resistant jug and begin to slowly add to your egg mixture while gently whisking {do not add it too quickly or you may end up with scrambled eggs!}

Once everything is mixed together, return your mixture to a jug for easier pouring. Pour the mixture into individual ramekins, fill each one approximately ? full, then placed them in a bain-marie {water bath} to allow for even cooking, in your preheated oven. Cook in your preheated oven for 30-35minutes or until just set. Remove from the oven and allow them to cool down before placing in a refrigerator for a minimum of 4 hours.

Just before serving, place a layer of soft brown sugar on the surface of the crème brulee and melt using a blow torch, to form a hard caramel layer.
